Having recently picked up a cheap pot belly BBQ (nicknamed Sputnik) and some wood chips I’ve been cooking outdoors in defiance of the British summer. Taking advice from the greatest grill masters I swerve the charcoal briquettes in favour of beech chips.
One of the best things about packing lots of that flame grilled, smokey flavour into your food is the way it elevates cheaper cuts of meat. Lean pork fillet takes nicely to a bit of char followed by proper resting, remaining moist inside.
Being a mid week dinner experiment the salsa was a logical use of left overs, so a vaguely Mexican marinade also made sense for the pork. Chilli sauce and soy give the pork a lovely colour too.
Lastly there had to be BBQ sauce to make the whole dish zing. Personally I’m a fan of sweet and spicy sauces, to the point where this one doesn’t even have any vinegar. By no means a purists sauce but it balances out over the dish with the salsa and pork being tart and citrus. Recently I’ve been avoiding squirting ketchup into these quick and dirty sauces, delicious as it is you tend to lose definition.
